Celebrate Seasonal Asparagus & Brill from a London Farmers Market
May is one of the most exciting months in the British food calendar, bringing with it the peak of asparagus season. Often called the “king of vegetables,” British asparagus has a famously short season, running from late April until June, with May offering the very best of its tender, sweet, and vibrant green spears. First cultivated over 2,000 years ago by the ancient Egyptians, Greeks, and Romans, asparagus was prized not only for its flavour but also for its medicinal qualities. By the Renaissance, it had become a luxury ingredient enjoyed across Europe, particularly by royalty, and today it remains one of spring’s most celebrated seasonal delicacies.
Pair this month’s asparagus with our seasonal fish of the month, Brill, a prized British flatfish, closely related to turbot, with a long history in European coastal cuisine. Valued for centuries for its delicate flavour and fine texture, Brill remains an elegant seasonal choice and the perfect complement to spring’s freshest produce.
For the perfect seasonal pairing, why not take inspiration from Nigel Barden’s delicious recipe for fillet of Brill with crushed Jersey Royals, asparagus and herb butter sauce. Combining tender Brill with new potatoes and fresh asparagus, it’s an ideal way to enjoy these exceptional seasonal ingredients at home this month, bringing together the very best of spring produce and British seafood.
You can pick up fresh asparagus from the following producers at our Farmers Markets:
- New Park Farm Asparagus – Weekly at Blackheath
- S Thorogood & Sons – Weekly at Pimlico Road
- Fruitway Farm – Weekly at Ealing, High Street Kensington, Marylebone, Queen’s Park, South Kensington, West Hampstead, Pimlico Road & Walthamstow
- Fiveways Fruit Farm – Weekly at Balham, Blackheath, Islington, Marylebone, Parliament Hill, Pimlico Road, Queen’s Park, West Hampstead & Wimbledon
