Vadsz Dei are outstanding makers of delicious pickles, relishes, kimchi & sauerkrauts. All hand made in small batches using natural ingredients and adapted from their traditional family recipes.
They specialise in lactic acid fermentation – their sauerkraut, kimchi and pickles are traditionally cured using English cabbage, natural salt and spices. Based in Hackney, East London, they have been brining since 2011.
Recipes are inspired and driven by Nick's family’s history and Hungarian Jewish heritage. His New Greens/1/2 Sours are based on the pickles his Grandmother would make every summer and have been received with great enthusiasm across our London markets. It's great to have Nick reviving the tradition of Jewish pickles.
