Simon started Libbys due to ill health after finding out he had a gluten intolerance. He and Keri (a professional masterchef winner) started to experiment, making gluten free and sugar free products ranging from croissants that taste like the real thing to delicious curds and granola all using FOS, a sugar replacement made from chicory. They now make a delicious range of breads, curds, granolas and cakes, all sugar and gluten free.
