Clare Gerrard, Teresa Franke and Nicole Schubert-Nicolas are shaking up fizzy drinks and making new fizz through fermentation! Their aim is to produce a low sugar soft drink with friendly bacteria. Water Kefir is a wonderful mildly zesty fermented drink and a magnificent source of beneficial friendly bacteria. Their delicious water kefir drinks are live, cultured, unpasteurised and made in small batches in north London.
 
Water kefir is made by fermenting kefir grains. Kefir grains are thought to have originated in Mexico where they thrived in the sugary water of the Ountia (prickly pear) cactus. An earlier story suggests water kefir originated in Tibet, where monks gave Mother Teresa of Calcutta the grains as a gift. They were later thought to be introduced to Europe and the west by the British Soldiers after the Crimean War in the 1800's. The word Kefir is derived from the Turkish word 'Keif" describing a state of 'feeling good'.
